Amarosa fingerlings are the most beautiful potato we carry. The deep rose skin and matching flesh make them look almost too good to eat, but please do. They are a waxy, thin-skinned variety with a buttery, slightly sweet flavour that holds together beautifully when roasted or pan fried. Certified organic and grown right here in Alberta by Eagle Creek, these are a true local gem. Halve them, toss with olive oil and salt, and roast until the cut sides caramelize. That is really all they need.
