Wildcrafted Fiddleheads
Fiddleheads are the tightly coiled young fronds of the ostrich fern, harvested once a year in early spring before they unfurl. The season is short and the window is narrow, which is why you rarely see them outside of it. These are wildcrafted in BC by West Coast Wild and come in 170 g clam shell packs.
The flavour sits somewhere between asparagus and green beans, with a slight earthiness. They need to be cooked before eating, either blanched, steamed, or sautéed. A quick turn in butter with garlic and a squeeze of lemon is the standard move, and it works.
