It is a garlic scape and radiatori summer salad, good warm, at room temperature, or cold, so it works for lunches, a potluck, or a simple side.
Ingredients
- ¾ cup dry radiatori pasta
- 1 bunch garlic scapes
- 1 zucchini
- 1 bunch fresh dill
- ½ cup crumbled feta cheese
- 1 tsp fresh ginger, finely grated
- A drizzle of olive oil
- Juice of ½ lemon
- Salt, to taste
Method
- Cook the radiatori according to the package directions. Drain and let it cool slightly.
- Trim and dry ends off the garlic scapes. Wash the scapes and the zucchini.
- Slice the zucchini into rounds or half-moons.
- Heat a grill or frying pan over medium-high. Grill or sauté the scapes until tender and lightly charred, and cook the zucchini until just tender with a bit of colour.
- Chop the scapes into bite-sized pieces and add them to a large bowl with the zucchini.
- Finely chop the dill and add it with the feta.
- Add the radiatori, drizzle with olive oil, squeeze in the lemon, and add the grated ginger.
- Season with salt and toss gently until combined.
Serve right away, or chill for an hour to let the flavours come together.
