Grilled garlic scapes

Grilled garlic scapes

Garlic scapes are one of my favorite things to come out of our field. They are the perfect marriage between green beans, asparagus, and garlic.

Here is one of the best ways to prepare them:

Method

  1. Preheat your grill to medium-high heat.
  2. Wash and trim the scapes, cutting off any tough ends. Be sure to keep the "flower" end attached - these are delicious and juicy
  3. Lay out a large piece of aluminum foil.
  4. Place the scapes in the center of the foil.
  5. Drizzle with your choice of oil (olive oil, avocado oil, butter, etc.).
  6. Sprinkle with salt to taste.
  7. Toss to coat evenly and then spread the scapes out in a single layer.
  8. Fold the foil over the scapes and crimp the edges to seal the pack. Sometimes we will do a double layer to keep the oil in.
  9. Place the foil pack on the grill and cook for 10 -15 minutes, turning once, until tender and slightly charred.
  10. Carefully open the foil pack and serve hot.
