Yellow skin over light yellow flesh, long oval, and they grow good and big. Excellency is a floury, dry matter potato, the one to reach for when you want fries, wedges or a baked potato rather than something that holds its shape in a salad. An excellent keeper for winter storage. Certified organic, grown without synthetic chemicals.

Early in the season the skins have not fully set, so you may notice some peeling from cleaning. That is normal, and those potatoes are best kept in the fridge. Later in the season the skins thicken and they store well in a cool pantry.
