Sheet pan dinner

Sheet pan dinner

Weeknights can get full fast. One thing we come back to very often is a simple sheet pan dinner. It's not fancy but it's full of good ingredients and just works. Here's a straightforward way to build one.

Step 1: Choose 3 or 4 Vegetables

Root vegetables are perfect right now. They roast well and get sweet and caramelized in the oven. Pick any combination of:

  • Potatoes
  • Carrots
  • Parsnips
  • Beets
  • Onions
  • Cabbage (cut into thick wedges)

Cut the roots into similar-sized pieces so they cook evenly. Keep cabbage in wedges so it holds together while roasting.

Step 2: Get the Vegetables Going

Toss everything with olive oil, salt, and pepper. Add garlic, thyme or a pinch of paprika for some extra zip!

Spread onto a sheet pan in a single layer.

Roast at 400 to 425°F for 45 to 60 minutes, stirring once or twice, until tender and nicely browned.

Step 3: Add the Sausage

Our farmers sausage or bison jalapeño cheddar sausage both work well here. They’re fully cooked, so they only need to heat through and brown a bit.

Add them to the pan for the last 20 to 30 minutes of roasting. Leave them whole or slice into large pieces.

That's dinner!

No need to overthink it. Pick your veg. Add your protein. Get on with your week.
